A couple weekends ago, we enjoyed the best savory pie at the Proper Pie Co. in Richmond. I highly recommend it! While I love baking sweet pies, I haven't delved much into savory recipes. This weekend, I decided to try my hand at a savory pie and the above is my result - a tasty tomato pie.
A filling of colorful tiny heirloom tomatoes & capers piled on top of a layer of parmesan and feta cheese.
For the pie crust, I made my favorite pate brisee which turns out perfect every time. The hardest part was having to wait the the two hours to cut into it.
