With some leftover puff pastry in the fridge, and a bowl of sweet blueberries I had the perfect ingredients to bake up some blueberry turnovers.
While I always enjoy making my own pie crusts, I never make my own puff pasty (much too time consuming). One sheet of store bought pastry, rolled out to a 12" square, will yield 4 turnovers.
I just sprinkled on a bit of sugar and a fresh grating of lemon zest and nutmeg. Brush an egg wash on the outside edges, fold over and seal with a fork. Don't forget to make two small steam slices in the top before baking. After just 20 minutes in a 400 degree oven, you'll be enjoying one of these.
