When summer berries are in abundance, we love to have fruit parfaits for breakfast. We layer our favorite yogurt (Stoneybrook vanilla or strawberry) with fresh blueberries, strawberries & raspberries and then top it off with homemade granola. This particular recipe is from the Barefoot Contessa's first cookbook. I vary the recipe depending upon what dried fruits & nuts I have in the pantry. You can also find the recipe online here. (My granola seems to brown faster than the time alloted in the recipe, so be sure to keep an eye on it.)
I always double the recipe so I have extra to gift to friends. When packaged in cellophane bags, and presented with a fresh basket of berries, it makes a perfect gift for your dinner hosts to enjoy the next morning.
